Instant Pot Copycat Starbucks Egg Bites (Bacon & Gruyère)

Ingredients
  

  • 3 Large Eggs
  • 1/4 Cup Gruyère Cheese Shredded.
  • 1/4 Cup Monterey Jack Cheese Shredded.
  • 1/2 Cup Cottage Cheese
  • 1/4 Tsp Salt
  • 1/8 Tsp Black Pepper
  • 2 Strips Bacon Cooked, Crumbled.
  • 1 Cup Water

Instructions
 

  • Add the cottage cheese to a blender and blend until smooth.
  • Into the same blender, add the eggs, gruyère cheese, monterey jack cheese, salt and pepper. Blend until incorporated.
  • Evenly divide the precooked bacon into the egg bite molds. Pour the batter into the molds and cover with aluminum foil.
  • Pour 1 cup of water into the instant pot and carefully place the egg bite mold into the pot.
  • Place the lid on the Instant Pot and turn the valve to the sealing position.
  • Pressure cook on high for 7 minutes and then wait 5 minutes for a natural release.
  • Once the egg bites are done cooking, allow to rest for about 5 minutes. Serve immediately or store in an air tight container for meal prep.
