Our Keto Turkish Chicken Kebabs (Tavuk Şiş) are full of flavour and easy to make! Typically kebabs are placed on a skewer and cooked on the BBQ. For our kebabs, we like to cook ours in oven for a more passive cooking method. They are served with a garlicky yogurt sauce and simple tomato cucumber side salad. 

What is Tavuk Şiş?

Tavuk Şiş or  Shish taouk is a traditional marinated chicken kebab from the Ottoman Empire. The meat is placed on a thick flat skewer and cooked over an open flame or BBQ. For our recipe, we bake ours in the oven for a more hands-off cooking method. However if you have the BBQ skewers, feel free to cook these on the BBQ if that’s what you prefer. 

How to Prepare Keto Turkish Chicken Kebabs: 

The easiest way to prepare this recipe is to use a food processor. In a food processor, add a peeled and roughly chopped beet, red bell pepper, onion, parsley and garlic cloves. Pulse until finely chopped. Alternatively, you can finely chop the vegetables with a kitchen knife or use a grater. Once the vegetables are chopped, squeeze out the excess moisture with a cheesecloth or kitchen towel. Set aside in a large mixing bowl. In the food processor, mince the boneless chicken thighs. Alternatively, you can buy ground chicken to speed up the prep time. 

Keto Turkish Chicken Kebab Spices

In this recipe we use a lot of spices. It creates a ton of flavour, so you don’t want to skip anything! We like to use a tablespoon of Ajvar (red pepper paste) in the mixture, however if you don’t have this you can use tomato paste. We also use the Turkish spice Pul Biber. If you do not have this, you can substitute with paprika and a pinch of chili flakes.

Ingredients

  • 2 Lbs Boneless Chicken Thighs Or Pre-Minced Ground Chicken
  • 1 Medium Beet About 100 grams.
  • 1 Large Onion (Yellow, White or Red) About 150 grams.
  • 1 Large Red Bell Pepper
  • 1 Bunch Flat Leaf Parsley
  • 2 Garlic Cloves
  • 1 Large Egg
  • 1 Tbsp Tomato Paste
  • 1 Tbsp Ajvar (Red Pepper Paste) Can substitute for tomato paste.
  • 1 Tbsp Plain Yogurt
  • 1 Tbsp Olive Oil
  • 1 Tbsp Pul Biber Can substitute for paprika with a pinch of red pepper flakes.
  • 1 Tsp Salt
  • 1 Tsp Cumin
  • 1/2 Tsp Pepper
  • 1/4 Cup Melted Butter

Instructions

  • In a food processor, add a peeled and roughly chopped beet, red bell pepper, onion, parsley and garlic cloves. Pulse until finely chopped. Alternatively, you can finely chop the vegetables with a kitchen knife or use a grater.
  • Remove the chopped vegetables from the food processor and place in a kitchen towel to squeeze out the excess moisture. Place in a large mixing bowl and set aside.
  • In a food processor or blender, add the chicken thighs and pulse until minced. Be careful to not over run the food processor or blender as the blades can heat up the meat. You can skip this step if using store bought ground chicken.
  • Place the minced chicken into the same bowl as the chopped vegetables. Add the yogurt, olive oil, tomato paste, red pepper paste and all of the spices. Mix until thoroughly combined.
  • Allow the marinade to set for at least 30 minutes or overnight.
  • Preheat Oven to 375°F.
  • Use a 1/3 cup to scoop out the mixture and shape into kebabs. Place the shaped kebabs onto a lined baking sheet.
  • Bake the kebabs in a preheated oven for 30-40 minutes until internal temp reaches 165°F and kebabs are golden.
  • Serve immediately with a side salad and some garlic yogurt sauce.
  • Enjoy!

For our Low Carb  Tater Tot Casserole we use veggie tots to keep the carbs low. This American comfort dish is a quick and easy dinner that the whole family will love!

Tater Tot Casserole Filling 

Our Low Carb Tater Tot Casserole uses ground beef with frozen peas and carrots. It is common to use corn in this casserole but to lower the carbs we opted for peas and carrots which we usually have on hand. You can swap this out for any low carb veggies of your choice, like green beans!

Veggie Tots 

For our casserole we like to use the Green Giant Veggie Tots. The cauliflower veggie tots are higher in carbs and the nutrition information is actually similar to regular tater tots. They have 15g of carbs with 2g of fiber per serving. The Green Giant Broccoli & Cheddar Veggie Tots have 14g of carbs with 5g of fiber per serving. This makes the Broccoli & Cheddar Veggie Tots only 9g of net carbs per serving, making it more suitable for a low carb diet. Feel free to use whatever brand of veggie tots that you prefer, just remember to read the nutrition label!

Low Carb Tater Tot Casserole Sauce 

Typically this dish uses a full can of condensed cream of mushroom soup. Surprisingly 1 can of Campbells Cream of Mushroom Soup has about 16 carbs! To lower the carb count, we use only half the can of soup, add heavy cream and sour cream. This keeps the carbs low and the same flavour profile as the original dish.

  • 1 Package Green Giant Broccoli & Cheese Veggie Tots 454 grams, Or Equivalent.
  • 500 Grams Regular Ground Beef
  • 2 Cup Shredded Cheddar Cheese Divided.
  • 1/2 Cup Frozen Peas and Carrots
  • 50 Grams White Onion Diced.
  • 1 Tbsp Butter
  • 1 Garlic Clove Minced.
  • 1 Tsp Salt

Sauce

  • 1/2 Can No Salt Campbell's Cream of Mushroom Soup
  • 2 Tbsp Sour Cream
  • 1/4 Cup Heavy Cream
  • 1 Tsp Ground Mustard
  • 1/2 Tsp Black Pepper
  • 1/2-1 Tsp Salt To Taste.
  • 1/4 Tsp Onion Powder
  • 1/4 Tsp Garlic Powder
  • 1 Tsp Chicken Better Than Bouillion Or Equivalent.

Instructions

  • Preheat Oven to 375°F.
  • In a large skillet melt 1 tbsp of butter and sauté diced white onion until translucent, about 5 minutes.
  • Add minced garlic and cook until fragrant, about 1 minute.
  • To the same pan, add the ground beef and cook until browned. Drain off excess moisture if desired.
  • Add the frozen peas and carrots to the pan and sauté for another 5 minutes. Set aside.
  • In a saucepan add all of the sauce ingredients and cook until bubbly (do not boil).
  • Mix the sauce with the cooked ground beef mixture
  • In a 9x9 baking dish, layer the mixed ground beef, sprinkle 1 cup of shredded cheese and top with the veggie tots.
  • Bake for 35-40 minutes uncovered until tots are crispy and golden brown.
  • Sprinkle the top with the remaining cheese and bake for another 5-8 minutes, until cheese is melted.
  • Enjoy!

This Keto Bread Pudding is a low carb take on the traditional British recipe! Made with keto-friendly bread, milk, cinnamon and raisins. This is an easy keto dessert recipe that’s low in carbs but full of flavour. 

Bread Pudding vs. Bread and Butter Pudding

Across the pond in the US and Canada, we commonly refer to “Bread and Butter Pudding” as “Bread Pudding”. Bread and Butter Pudding is a dessert made with stale bread that puffs up like a souffle. Traditional British Bread Pudding is a dense and moist cake that can be served hot or cold with a cup of tea.

What Type of Bread to Use for Traditional Bread Pudding

Traditional UK Bread Pudding is made with a stale loaf of bread. Typically you would use a crusty loaf of bread instead of the pre-sliced bread from the store. For our Keto Bread Pudding, we are keeping it easy and using what’s the most easily accessible. For this recipe we use the Carbonaut Keto White Bread. Feel free to substitute this with whatever low carb bread you prefer. Another note, the traditional recipe calls to remove the crusts from the bread. You can definitely do that with this keto recipe. We left out that step because this typically wastes a lot of bread and keto bread isn’t cheap! If you are removing the crusts, you’ll want to add at least 1 more slice to  the recipe.

Keto Sugar Replacement 

The mixture for this recipe calls for keto brown sugar. For this, we like to use the Swerve Brown Sugar Replacement. If you don’t have this, you can mix maple extract with the sweetener of your choice for a similar result. Once the bread pudding is done baking, allow to cook and sprinkle with white granulated sweetener.

  • 13 Slices Carbonaut Keto White Bread Or Equivalent, About 1 lb.
  • 1 Cup Unsweetened Almond Milk
  • 1/2 Cup Heavy Cream
  • 1/2 Cup Swerve Brown Sugar  Or Any Keto-Friendly Sweetener Mixed with 1/4 Tsp Maple Extract.
  • 1/4 Cup Raisins Soaked in 1 Tbsp of Spiced Rum or Water.
  • 100 Grams Butter Softened, Room Temperature.
  • 1 Large Egg Whisked.
  • 1 Tbsp Cinnamon
  • 1/2 Tsp Nutmeg
  • 1-2 Tbsp Warm Water If Needed.

Instructions

  • Break the bread into small pieces and put into a bowl.
  • Heat heavy cream and unsweetened almond milk over the stove, do not boil.
  • Pour the milk over the bread and let soak for 30 minutes.
  • Meanwhile, soak the raisins in water or spiced rum.
  • Add 1 large whisked egg, soaked raisins, butter, cinnamon, nutmeg and 1/2 cup Swerve Brown Sugar to the bread mixture. Combine thoroughly. You may need to use your hands to ensure that there are no lumps in the mixture.
  • The mixture should look mushy, if it isn't you may need to add more moisture. Start with 1 tbsp of warm water and go from there.
  • Pour the bread mixture into a 9x9 greased baking dish and bake in the center of the oven for 30-40 minutes.
  • Allow to cool and sprinkle with granulated sweetener for serving.
  • Enjoy!

Keto Instant Pot Chili

Our Keto Instant Pot Chili is quick, easy and is ready in under 1 hour! This recipe uses common ingredients but has layers of complex flavours. It is made with ground beef, optional keto black soy beans, good quality canned tomatoes and various spices. This recipe is the perfect cozy meal. Perfect for busy weeknights and meal prep!

Is Chili Keto? 

Traditional Chili typically doesn’t fit within a keto diet because the beans are too high in carbs. In this keto recipe we use optional black soy beans. These keto-friendly beans are low in carbs and high in fiber. For a half cup, it contains 11 grams of carbohydrates and 6 grams of fiber.

Keto Instant Pot Chili

Spices 

In this Keto Instant Pot Chili we use 7 different spices. Together these create a rich and complex flavour. The use of unsweetened cocoa powder might seem a little bit unusual, but trust us! It offsets the acidity of the tomatoes and deepens the flavour of the chili. We like to make a big batch of our chili seasoning so that it’s even quicker to make this meal! If you’re doing this, use a 1/2 cup of the pre-mixed spices for 2 lbs of ground beef. 

Tomatoes 

To get the best tasting chili, we recommend using good quality canned tomatoes. We recommend this, because some brands of canned diced tomatoes are more watery than others. In fact, we like to use whole peeled San Marzano Tomatoes or  La Pavoncella Italian Peeled Tomatoes (grown and packed near naples for Italian Center Shop Ltd). If using whole peeled tomatoes, roughly chop them before adding them into the instant pot.

What to Serve with Keto Chili 

A fresh dollop of sour cream, green onions, cheddar cheese and fresh avocado are perfect additions to chili! Together this makes a complete meal and we enjoy eating it as is.

How to Make Keto Instant Pot Chili 

To make our Keto Instant Pot Chili you’ll first have to saute the ingredients.

  • Select the “sauté” setting on your instant pot. Once hot add your oil and sauté the diced onion. Once translucent, add the minced garlic. 
  • Next, add the ground beef and cook until browned, about 5 minutes. 
  • Stir in the tomato paste and cook for another 1-2 minutes. 
  • Stir in all of the spices, diced canned tomatoes, canned jalapenos with liquid and optional black soy beans. 
  • Place the lid on the Instant Pot and lock into place. Select the bean/chili setting and cook for 35 minutes.

  • 3 Tbsp Chili Powder
  • 1 Tbsp Ground Mustard
  • 1 Tbsp Dried Oregano
  • 2 Tsp Salt
  • 1 Tsp Smoked Paprika
  • 1 Tsp Unsweetened Cocoa Powder
  • 1 Tsp Black Pepper
  • 1 Medium Bay Leaf

Instructions

  • Turn your Instant Pot to Sauté, once hot add olive oil to the pot.
  • Sauté the diced onion until translucent, 3-5 minutes.
  • Add garlic and sauté for another minute.
  • Add the ground beef and Worcestershire sauce. Break apart the ground beef with a spatula. Cook until browned.
  • Add the tomato paste and cook for another 1-2 minutes.
  • Stir in the diced tomatoes, canned jalapenos, all of the spices and optional Black Soy Beans.
  • Place and lock the lid on the Instant Pot. Select the Chili/Bean setting and cook for 35 minutes.
  • Allow for a natural release or carefully manually release.
  • Serve with sour cream, diced avocado, green onion and/or your choice of cheese.
  • Enjoy!

This marinade has it all! Marinate the chicken in olive oil, lime juice, salt, chili powder, garlic powder, black pepper, coriander, oregano, chipotle powder and keto honey substitute. How to Make Cauliflower Rice Taste Good 

We’ve been making keto cauliflower rice for over 5 years! In the beginning, we hated it. But after testing various recipes and cooking methods, we think we’ve narrowed down the tastiest way to make it. 

  1. Buy Frozen Cauliflower Rice. Yes, frozen is best! We prefer this over the fresh cauliflower rice. In our experience the “fresh” cauliflower rice at the grocery store was always close to going bad. You can of course make your own cauliflower rice, but this makes the meal much more labour intensive. 
  2. Remove as Much Moisture As Possible. Cauliflower holds a lot of water. To get the best texture for your cauliflower rice, we recommend steaming the frozen cauliflower in the microwave. Allow the cauliflower to cool and squeeze out as much moisture as possible with a kitchen towel. 
  3. Seasoning, Seasoning and More Seasoning! Cauliflower rice isn’t the best on it’s own. It’s kind of bland! But this makes it a great base to take on whatever seasoning you prefer. In this dish we use A LOT of fresh cilantro and lime juice to flavour or cauliflower rice. If cilantro isn’t your thing, you can try our Keto Coconut Cauliflower Rice that’s featured in our Keto Cilantro Lime bowl.

How to Serve Keto Honey Chipotle Chicken 

This recipe is a complete keto meal! The Keto Honey Chipotle Chicken is best served with fresh avocado and our Keto Cilantro Lime Cauliflower Rice. If you’re looking for something different, you can serve the chipotle chicken with whatever low carb sides that you like! When I doubt, we like to make an easy tomato cucumber salad dressed with olive oil, lime juice and a bit of salt.

  • 1/2 Lime Juiced.
  • 1/4 Cup Cilantro Finely Chopped.
  • Salt To Taste.

Avocado

  • 2-3 Medium Avocados Diced.
  • 1 Lime Juiced.
  • Red Onion Diced, To Taste.
  • Salt To Taste.

Instructions

  • Lightly pound the chicken breast so that each piece has an even thickness.
  • In a large bowl combine all of the seasoning, olive oil and keto honey.
  • Mix the marinade with the chicken and allow to marinate for 30 minutes covered in the fridge.
  • Meanwhile, prepare the cauliflower rice.
  • Steam the frozen cauliflower in the microwave according to the package directions. Allow to slightly cool.
  • Once cooled, use a kitchen towel to drain the excess moisture.
  • In a pan over medium heat, add the drained cauliflower rice, lime juice, fresh cilantro and salt. Cook until heated through and flavors have combined. Set aside.
  • When the chicken is done marinating, heat a large skillet over medium-high heat. Cook the chicken for 5-6 minutes until browned, flip and cook for an additional 7-8 minutes until browned and cooked to 165°F.
  • Dice the avocados and mix with lime juice, red onion and salt to taste.
  • Assemble your bowl with the cauliflower rice, chicken and avocado.
  • Enjoy!

Instant Pot Copycat Starbucks Egg Bites Bacon and Guyere Cheese

Our Instant Pot Copycat Starbucks Egg Bites are the perfect keto snack! These high-protein snacks are perfect for meal prep. While Starbucks uses the sous vide method to cook their egg bites, we are using the Instant Pot. It’s easy, nutritious and keto-friendly. 

The Method  

For these egg bites, you’ll want to purchase a silicone egg mold that can fit in your Instant Pot. Instant Pot makes their own or you can find compatible ones on Amazon. These molds are great because they come with a lid, which is perfect for meal prep storage. 

To make the egg bites, first place the cottage cheese in a blender and blend until smooth. Once incorporated, add the eggs, gruyère cheese, Monterey jack cheese, salt and pepper. You’ll want to blend the cottage cheese first. If you add all of the ingredients into the blender at once, you may incorporate too much air into the eggs. This can cause them to fall flat once cooled. Blend until fully incorporated. Evenly divide your cooked chopped bacon into the egg molds, then evenly pour the batter into the molds. Cover with aluminum foil. Place 1 cup of water into the Instant Pot and carefully set the filled egg molds into the pot. Pressure cook on high for 7 minutes and allow 5 minutes for a natural release. 

Ingredients 

We tried to make this recipe as close to the Starbucks egg bites. On the Starbucks website it lists the cheese blend as Monterey jack and Gruyère. Feel free to change up the ingredients to your liking! You can use any cheese such as cheddar, gouda, Havarti etc. You can add veggies such as diced red bell peppers or green onions.

Ingredients

  • 3 Large Eggs
  • 1/4 Cup Gruyère Cheese Shredded.

Instructions

  • Add the cottage cheese to a blender and blend until smooth.
  • Into the same blender, add the eggs, gruyère cheese, monterey jack cheese, salt and pepper. Blend until incorporated.
  • Evenly divide the precooked bacon into the egg bite molds. Pour the batter into the molds and cover with aluminum foil.
  • Pour 1 cup of water into the instant pot and carefully place the egg bite mold into the pot.
  • Place the lid on the Instant Pot and turn the valve to the sealing position.
  • Pressure cook on high for 7 minutes and then wait 5 minutes for a natural release.
  • Once the egg bites are done cooking, allow to rest for about 5 minutes. Serve immediately or store in an air tight container for meal prep.
  • Enjoy!

Keto Italian Meatballs

Our Keto Authentic Italian Meatballs in Tomato Sauce are easy to make, juicy and full of flavour. These traditional meatballs or “polpette” are made with a mixture of ground beef, pork, parmesan-reggiano and fresh parsley. To make these keto, we replace regular breadcrumbs with homemade breadcrumbs using Carbonaut Keto Bread. 

Keto Breadcrumbs

In this recipe, we use Carbonaut Keto Bread to make breadcrumbs. Here in Canada, this keto bread is currently available at Costco. However, you can also buy this online! We like to keep this bread on hand to make keto recipes and for a quick meals. Feel free to substitute this with any keto bread that you prefer. Keep in mind that this may change the nutrition info. Almond flour may also work but we haven’t tested this ourselves. You may need to adjust the amount of almond flour needed (less or more) depending on the texture of the meatball. 

To make the breadcrumbs, we toast the bread and then pulse it in a food processor or blender to make the crumbs. It’s that easy!

Baking 

Since this is a large batch of meatballs, we prefer to bake these in the oven and then simmer them in the sauce. If you prefer, you can pan fry the meatballs in olive oil until brown on all sides. Once the meatballs have browned, simmer them in the sauce for approx. 20-30 minutes until tender. 

Pomodoro Sauce

For the tomato sauce, we recommend using homemade sugar-free marinara sauce or keto-friendly store bought sauce. Rao’s Marinara sauce is VERY good (especially for a store-bought sauce!), easy to find and has only 5g of net carbs per 1/2 cup. You can easily buy this online or it is available at most grocery stores here in western Canada, including Costco.

Ingredients

  • 750 Grams Ground Pork
  • 500 Grams Ground Beef or Veal
  • 3/4 Cup Parmesan Reggiano Grated.
  • 1/2 Cup Fresh Parsley Finely Chopped.
  • 1/2 Cup Keto Breadcrumbs 2 Slices of Carbonaut Keto Bread Toasted and Pulsed Into Breadcrumbs with a Food Processor or Blender.
  • 3 Eggs
  • 2 Garlic Cloves Minced.
  • 1 1/2 Tsp Salt To Taste.
  • 3/4 Tsp Pepper To Taste.
  • 1 Jar Rao's Marinara Sauce (or Homemade) 770 ml

Instructions

  • Preheat Oven to 400°F.
  • In a large bowl combine all of the ingredients except for the marinara sauce.
  • Once the ingredients are combined, use your hands to form the meatball into the size of a golf ball. Makes approx. 40 meatballs.
  • Place the formed meatballs onto a lined baking sheet.
  • Once all of the meatballs are formed, place into a preheated oven and bake for 20 minutes.
  • Meanwhile, heat the marinara sauce in a large skillet and bring to a simmer.
  • Once the meatballs are done cooking, place them in the sauce and simmer for another 20-30 minutes.
  • Serve with a side salad and enjoy!

Our Easy Turkey Zucchini Skillet is a one pot meal that’s perfect for busy weeknights! It is made with spices, tomatoes, zucchini and onion. This recipe is full of flavor, low carb, keto and gluten-free. 

Easy Weeknight Meal 

We love an easy one pot weeknight meal! This Easy Turkey Zucchini Skillet makes it easy to continue to eat a healthy diet. Even better, this is something that the whole family will love. It is full of flavor, has loads of veggies and the topping of a fresh avocado makes this a complete meal. This recipe is also great for meal prep as it reheats perfectly in the microwave or on the stovetop.

Black Soy Beans

To keep this recipe low carb, we use black soy beans. These can easily be found online or at most grocery stores! Although if you are not following a keto or low carb diet, you can substitute these for regular black beans. 

Topping 

We really think that the fresh avocado and lime juice completes this meal! You can serve this as is or serve or cauliflower rice bulk up the meal and keep it low carb. We like serving this dish with Tex-Mex shredded cheese. It makes the dish even easier to make. Feel free to use your favorite cheese such as Monterrey jack, cheddar, etc.

Protein

We like using ground turkey in this recipe. The lean protein pairs well with the zucchini and the freshness of the avocado. However, this dish will work well with just about any protein including:

  • Ground Chicken 
  • Ground Beef 
  • Tofu 

Just remember that changing the protein will change the nutrition information that I have below. If following a low carb or keto diet, keep in mind that tofu will increase the carb count as well!

  • 1 Lb Ground Turkey

  • Fresh cilantro, avocado, lime juice Garnish.

Instructions

  • In a large skillet heat oil over medium-high heat.
  • Add diced onion and sauté for 5 minutes until translucent.
  • Add minced garlic and sauté for 1 minute until fragrant.
  • Add the ground turkey to the skillet and use a spatula to break it apart. Once browned, stir in all of the seasoning.
  • Stir in tomato paste and cook until fragrant, 1-2 minutes.
  • Add black soy beans, tomatoes and diced zucchini. Sauté for 5-10 minutes until zucchini is tender and most of the liquid has reduced.
  • When the skillet is done cooking, sprinkle on the shredded cheese.
  • Serve with fresh avocado, cilantro and lime juice.
  • Enjoy!

Our Keto Raisin “Bran” Muffins are made with flaxseed meal, buttermilk and raisins soaked in spiced rum (optional)! These keto muffins are loaded with fiber and are only 4.5g of net carbs per serving. Best served warm with a generous amount of butter!

Keto Flaxseed Muffins 

These keto muffins are made with flaxseed and taste very similar to a traditional bran muffin. Flaxseed is high in fiber and is easy to find at most grocery stores. We like to buy ours from Costco, but you can easily find it online too! These muffins are great for a keto breakfast, sugar-free dessert or snack. 

Are Raisins Keto? 

Raisins are high in carbs. However, these muffins are only 4.5g of net carbs per muffin! This means that you can easily fit these into a keto or low carb diet. We believe in following a low carb diet long-term. To be successful, we don’t believe in limiting or villainizing ingredients. We are lucky to have access to a wide variety of food. Using higher carb ingredients in moderation is completely doable. 

Do I Need to Soak the Raisins? 

Yes! soaking the raisins will make them a nice soft texture. We really like to level up the flavors by soaking the raisins in spiced rum. This is completely optional, soaking the raisins in water will work too.

  • 5 Cups Milled Golden Flaxseed
  • 2/3 Cup Swerve Brown Sugar Or Any Keto-Friendly Sweetener Mixed with 1/4 Tsp Maple Extract.

  • 1/3 Cup Avocado Oil Or Any Neutral Oil.
  • 1/4 Cup Raisins Soaked in 1 Tbsp Spiced Rum or Water.

Instructions

  • Preheat Oven to 350°F.
  • Soak chopped raisins in 1 tbsp of spiced rum or water, set aside.
  • Beat eggs, buttermilk, oil and vanilla extract with a hand mixer or stand mixer on high for 30-45 seconds until foamy.
  • In a large bowl, whisk together flaxseed, sweetener, salt, baking powder and baking soda.
  • With a spatula, slowly stir in the buttermilk mixture to the flaxseed mixture until just incorporated. The mixture will be very fluffy. Allow to sit for 5 minutes.
  • Evenly distribute the soaked raisins to 12 muffin tins.
  • Pour the batter evenly into the muffin tins. Gently stir each muffin tin to distribute raisins throughout the batter.
  • Bake for 15-18 minutes until a toothpick inserted come out clean. Allow to cool.
  • Serve with a generous amount of butter, enjoy!

Keto Sushi Bake with Cauliflower Rice

Our Easy Keto Sushi Bake is with just like a California sushi roll! We make this easy keto casserole with seasoned cauliflower rice, imitation crab, Kewpie mayo and Sriracha. This recipe is easy to make and is great for meal prep!

What is Sushi Bake? 

Sushi Bake is a deconstructed sushi roll that’s basically a casserole! This dish gained popularity during the COVID-19 lockdowns in 2020. The sushi bake trend was a great way for restaurants and entrepreneurs to offer take-home dishes during the lockdowns.  Although a trend, it looks like this dish is here to stay! It’s versatile, easy and a great way for home cooks to get the sushi flavors. 

How to Make Cauliflower Rice Taste Good

I know, I used to be one of those people that HATED cauliflower rice. I would roll my eyes when people would suggest it as a rice substitute. But here’s the thing, you just need to know HOW to prepare it. I always opt for frozen cauliflower rice as I find that the fresh bagged cauliflower rice at the grocery store spoils too quickly. Also who has time to make their own cauliflower rice.

Frozen cauliflower rice is best if steamed in the microwave first. Next (the most important step), you have to drain as much liquid as you can out of the cauliflower rice. This will give you the best texture. Finally you’ll want to season the cauliflower rice as much as you can. In this recipe I added dashi miso paste. This step is optional but remember, the more flavor added, the better! With the moisture gone and the extra seasoning most people end up loving cauli rice!

How to Serve Keto Sushi Bake

Sushi Bake tastes beside topped with fresh veg such as cucumber and avocado. To take things up another level, serve the sushi bake with Korean roasted seaweed snack. These can be found at almost any grocery store, including Costco!

Can I Make Sushi Bake with any Seafood? 

Definitely! Our recipe uses imitation crab meat because that’s what’s commonly used in a California Roll. You can use real crab, shrimp, salmon, tuna or even chicken.

  • 1/4 Cup Furikake
  • 1/4 Cup Rice Vinegar
  • 1 Large Egg
  • 1 Tsp Keto Friendly Sweetener Stevia, Erythritol etc.

Topping

  • 1 Tbsp Mayo To Taste.
  • 1 Tbsp Sriracha To Taste.
  • 1/4 Cup Pineapple Optional.

To Serve

  • 1/4 Cup Green Onion Diced, to Serve.
  • 1/4 Cup Cucumber Diced, to Serve.
  • 1 Avocado Diced, to Serve.
  • 4 Packages Korean Roasted Seaweed Laver Snacks

Instructions

  • Preheat oven to 375°F.
  • Thaw cauliflower rice in the microwave according to the package directions (about 3-5 minutes). Set aside and allow to cool.
  • While the cauliflower rice is cooling, prepare the filling.
  • Run the imitation crab meat through a food processor or chop up
  • In a large bowl, combine the imitation crab meat with the mayo, cream cheese, black sesame seeds, sriracha (to taste) and egg.
  • Spread the filling mixture into the bottom of a 9x9 baking dish.
  • When the cauliflower rice has cooled, use a kitchen towel and squeeze out as much moisture as you can.
  • Heat 1 tbsp of sesame oil in a large pan on medium heat.
  • Lightly sauté the cauliflower rice with dashi miso paste (optional) to cook out any excess moisture. Stir constantly to make sure that the cauliflower doesn't brown. About 5 minutes. Adjust salt if needed.
  • Stir in mayo, furikake, egg, rice vinegar and sweetener to the cauliflower rice.
  • Spread the cauliflower rice mixture of the filling in the 9x9 pan. Top with kewpie mayo, sriracha and pineapple chunks if using.
  • Bake uncovered for 25 minutes until heated through.
  • To serve, top with chopped cucumber, green onion and avocado.
  • Serve with roasted seaweed snack.
